Fleur de Sel was opened by Sylvie MacDonald and Martin Ruiz Salvador in the spring of 2004. Visually, the place is stunning: vibrant yellow outside, butter-yellow inside with Palladian arches, French porcelain and white linen. The menu changes every month. Lunch means maritime chowder, five-spiced halibut and steak with fries. In the evening they bring on three cold soups (the canteloupe soup is marvelous), local asparagus with a warm tomato – and – walnut remoulade, a rare-beef salad with arugila and Roquefort and organic-chicken terrine. Marin dishes are built around fresh seafood (bouillabaisse, lobster and tongue and cheeks (cods’ tongues and cheeks with bacon, potatoes and fava beans). There’s also organic breast of duck and lamb three ways – the lamb shanks explode with flavour. Sweets are rather less interesting, though there’s a good chocolate fondant. The wine list is small – twelve red and twelve white – but very carefully chosen.
