Winter Salad
Gessler farm carrots, brussel sprouts, mâche, cumin, cardamom, pumpkin seeds, beetroot reduction

Foie Gras
Seared Quebec foie gras, duck confit, celeriac, jus de volaille

 

MAIN COURSE
Lobster
Butter poached Lunenburg lobster, grilled fingerlings, shaved fennel, caramelized cauliflower
 
Scallops
In shore Lunenburg scallops, house cured bacon, Nova Scotia cep mushrooms, handmade tagliatelle, pea shoots
 
Beef
Prince Edward Island beef tenderloin, braised beef shank, Périgord black truffles, potato mash, creamed kale, veal jus

Quebec farmhouse cheese, lavender honey comb, chopped nuts, frisée, apricot bread
